For the Soup:
- 2 Tbsp of Olive Oil
- 2 Skinless chicken breast, about 3/4lb
- 1/2 of a Yellow onion, diced
- 2 Carrots, peeled and diced
- 2 Stalks of Celery, diced
- 14 oz of Salsa, either homemade or store bought
- 12 cups of Chicken Stock
- 1/2 tsp of Chili Powder
- 1/2 tsp of Ground Cumin
- 1/2 tsp of Dried Oregano
- 6 oz of Egg Noodles
- Salt, to taste
Optional Toppings:
- Diced avocado for topping
- Cilantro for topping
- Lime wedges for topping
